This is a rich style of Chardonnay with the accent on strong fruit flavours. Ripe melon, nectarine and summer peach aromas abound with oak hints of cedar and spice and a long, full, yet soft finish. ideal matched with creamy pasta and white meat dishes. It is also delicious with seafood. Vineyard: This Chardonnay is a mix of the Mendoza clone and Clone15 from the Ngatarawa and Taradale areas in the Hawke's Bay. Free-draining stony silty loams are the predominate soil type in this area. The crop was kept low and well exposed to ensure good even ripening and flavour development. Winemaking: This Chardonnay was cool fermented with both aromatic yeasts and Burgundy style yeasts in stainless steel tanks. Once fermentation was completed, the wine was left for an extended period on yeast lees to promote textural qualities and mouthfeel. The wine exhibits pineapple and grapefruit flavours with a rich mealy texture.

With this wine, we are trying to achieve a more Alsace style of Pinot Gris that is richer and more complex. A portion has therefore been barrel fermented to develop texture and complexity in the final wine. The palate displays aromas of pear, nectarine and toasted almonds leading to a lingering dry finish. This wine is best enjoyed in its youth but will further develop over the next 4 years. Vineyard: Fruit for this Pinot Gris is from our vineyard in the northern Wairarapa and a blend of two different clones. Young vines with a small crop that reached very good ripeness in a long season and a cooler summer followed by a warm dry autumn. Winemaking: To develop some richness and creaminess in this wine, we have barrel-fermented 30% of the blend in old barrels. We have also used a variety of yeasts (including some wild ferments) in these barrels to build complexity in the wine. Of the tank-fermented portion, we have used an aromatic yeast to capture that fresh varietal character of Pinot Gris.

The Holly wines are the flagship range for Matahiwi and are named after the owner's daughter. We are trying to achieve balance with this wine between maintaining the pure Sauvignon fruit vibrancy and building in complex yeast and barrel derived flavours. Lime skin and elderflower aromas along with a mineral, crushed stone note, marry with nutty yeasty characters and a savoury edge. While this wine is ready to drink now, it can be cellared for up to four years. We enjoy this wine with freshly smoked white-fleshed fish served on crostini or try with a leek and pecorino tart. Vineyard: The fruit for this wine is sourced from our home vineyard at Opaki in the Wairarapa. These blocks receive special care during the season with shoot thinning, bunch thinning and hand leaf plucking to ensure a small and intense crop of premium grapes. Absolute commitment to physiological ripeness is crucial. Winemaking: The focus in the winery is to capture the pure fruit flavours that come from supremely ripe fruit, whilst adding complexity through barrel fermentation, use of wild yeasts (yeast that come in on the grapes from the vineyard) and lees stirring. The wine remains in the barrel on yeast for 10 months to give weight and complexity.

This attractive, soft Pinot Noir shows dark plum and cherry flavours with fragrant fresh hay and cedary oak characters. On the palate, the vibrant cherry flavours come through with a hint of spicy toasty oak and velvety tannins. Vineyard. The Holly Pinot Noir is chosen in the vineyard to provide some of our best fruit. The Matahiwi vineyard is planted in several combinations of rootstock and Pinot Noir clones. For this Pinot Noir, we used the clones of 667, 5, 777, Abel and 113. In the final blend, each clone adds their own character and complexity. The 2008 vintage was excellent with warm weather during flowering and a long dry summer with hot days and cool nights - perfect Pinot Noir ripening conditions. This resulted in vines with a balanced crop load and the fruit achieving ideal ripeness. The vineyard blocks selected for the Holly Pinot Noir recieve additional attention during the growing season with alot of leaf plucking and shoot positioning done by hand to expose the fruit and ensure optimum ripeness. Winemaking: In the winery the different batches of fruit are processed separately so that we can see the individual characters on their own. We then add further complexities by incorporating different techniques and yeast combinations. The grapes are cold soaked for between five to seven days and then fermented at about 28-32C. If the fruit is in very good condition still we allow up to 21 days post-ferment on skins before the grapes are pressed off and malolactic fermentation is completed in the tank. The wine is matured in French oak barrels (about 35 per cent are new) for 10 months. The barrels are then each individually tasted before the final blend is confirmed.

This addition to the Holly reserve range is a luscious wine in a botrytised late harvest style. A first at Matahiwi for winemaker Jane Cooper, using a blend of 69% Sauvignon Blanc and 31% Riesling grapes. Vineyard: The fruit for this wine was sourced from our home vineyard in Opaki, and from the Manu vineyard to the west of Masterton. The grapes were left on the vines late into the autumn so as to develop the high sugar levels and botrytis saturation necessary to make the style of wine we wanted. Winemaking: The fruit for this wine was hand-picked and then pressed, with a small portion being left to soak on the skins overnight. The juice was then transferred for fermentation with aromatic yeasts, two thirds in a stainless steel tank, with the remaining third of the juice being put into older French oak barrels, where they underwent a further 5 months of aging. The wine was then lightly fined, and blended together in preparation for bottling.

This is a wonderfully luscious wine with aromas of pear and spice on the nose and a tropical richness on the palate which is well balanced and off-dry. Enjoy in its youth or cellar for 2-3 years. This crisply styled, refreshing wine has a wonderful combination of lime, passionfruit and gooseberry aromas with a hint of minerality – typical stylish Sauvignon Blanc! We love to drink it with seafood and pasta dishes and delicious summer salads. While this wine is ready to drink now, it can also be cellared for up to two years. Vineyard: The fruit for this wine was grown in two Wairarapa vineyards with different soils, one on stony loam, the other a hillside clay. This variety helps to increase the complexity of the wine. The vines are relatively young and are cropped at low levels to give intensely flavoured grapes. Winemaking: The focus in the winery is to capture the pure fruit flavours that come from the vineyard whilst adding complexity through our winemaking efforts to provide a multi-dimensional wine. This is achieved by tank fermenting the juice using yeasts that are able to ferment to low temperatures – preserving the essential fruit flavours.
