PRODUCTION
Short maceration of the must with the skins at low temperature for four hours before pressing.
For this special wine from the winery that bears its name, only the first portions of the free-run juice from the pneumatic press were used.
Fermentation was controlled at very low temperatures.
Aging: After the first racking, the wine spent two months in stainless steel tanks on its fine lees before bottling.
TASTING NOTES
Appearance: The result is this bright straw-yellow wine.
Aroma: An excellent combination of citrus, white flowers, and subtle toasty notes.
Taste: A broad, enveloping, and creamy palate with fresh acidity and an interesting, evocative finish.
Food Pairing: Appetizers, shellfish and white fish, white meats, salads, and seafood stews.
