VINEYARD LOCATION - Plessiva in Cormons and Ruttars in Dolegna del Collio. TYPE OF SOIL - Marl and sandstone. TASTING NOTES - Chardonnay is a wine of quite high alcoholic content and fixed acidity.Its refined bouquet recalls the fragrances of ripe Golden-type apple and crust of fresh bread. Appetizing, subtle and very fine taste. Good combination with the whole range of low-fat hors d’oeuvres, and peach base soups or dishes as well. HARVEST - In the second half of September. Harvest hand made. VINIFICATION - White winemaking method, including a 12-hours maceration process, soft pressing and fermentation at a controlled temperature. AGEING - Both in oak barrels and steel tanks. NOTES - The vineyards date from 10 to 25 years back. The vine-growing systems are Guyot and double-inverted type. Density: 4.500 / 7.500 vines each hectare. TO BE SERVED AT - 12 / 14°C.

VINEYARD LOCATION - Plessiva and Novali, in Cormons. TYPE OF SOIL - Marl and sandstone. TASTING NOTES - Tocai is a dry wine with a strong and rich bouquet. The colour is straw yellow. It tastes subtle and fine, with a good acidity standard and a full body. To be favourably tasted with hors d’oeuvres (ham in particular), light soups, fish and white meat dishes. HARVEST - In the second half of September. Harvest hand made. VINIFICATION - 12-hours maceration process at a low temperature, soft pressing and fermentation at a controlled temperature. AGEING - 80% in steel tanks and 20% in oak barrels. NOTES - The vineyards date from 20 to 30 years back. The vine-growing systems are double-inverted type, providing a density of 5.000 vines each hectare, and Guyot (8.000 vines per ha.). TO BE SERVED AT - 12 / 14°C.

TASTING NOTES - As this Pinot Grigio undergoes white winemaking method, its bouquet is extraordinarily fruity, bringing out apple and pear fragrances in particular. It tastes rich and velvety, with acidity and body in perfect harmony. Good combination with hors d’oeuvres, fish soups and white meat dishes. HARVEST - In early September. Harvest hand made. What you would like to know more: This is a sparkling wine from the Veneto region in Northern Italy from mixed soils. Sayang Mmuahh Brut is a Vino Spumante made with Chardonnay and Pinot Blanc and shows a really exciting yummy flavour and mouthfeel. What people note down during tasting: Light yellow colour with hints of green. Refined and cute sparkle. Harmonious balance of delicate fruity notes, hints of yeast and brioche. Elegant and delicate sparkle to set off a dry yet pleasing mouth feel. A touch of apple with a nice acidity and crispy white fruit. Medium bodied elegant finish that is not hard or heavy. What winemakers did: The must is immediately divided from the skins and then passed into a steel tank where it completes its fermentation for about 8/10 days at a controlled temperature of 18 °C. After a stipulated storage period, the winemaker studies a skilled coupage to achieve the Spumante cuvée. Then the wine is filtered and stored in steel tanks to undergo the second fermentation at a controlled temperature of 14-15 °C. Once the wine has reached the required pressure levels, alcohol and sugar content, the wine is refrigerated and cold stabilized, filtered and controlled before bottling.

The quality of the Carignano grape is excellent in the Sulcis area, not only in terms of colour, but also for the softness of its soluble compounds - from the tannins to the consistently low and elegant acidity and the smoothness of its main components. Its polyphenolic apparel is of a distinguishably sweet, extremely delicate, round tannin weave chromatically embroidered with refined anthocyanins. Colour: lively, deep ruby red; nature’s gift of colour. Perfume: complex scents of mature red fruits (mainly black cherry), spices, notes of liquorice and hints of myrtle. Taste: an elegant wine that shows exceptional workmanship. Aging: 18 months in French oak, 50% new and 50% year old; 20-30 days in fiberglass-lined cement tanks; and 6 months in bottle.
