The Montepulciano grapes come from the rugged, hilly Abruzzo region in central Italy, known for the production of rich, robust reds made from the local Montepulciano grape. The Appenines tower over the region, which has vineyards stretching from the mountain slopes down to the Adriatic sea. Fermentation: Specially selected yeasts are added in order to start the fermentation which is temperature controlled at 26-28°C for 10 days. After racking the wine is inoculated with bacteria to induce malolactic fermentation at 20°C for 20-30 days. Tasting Notes: Montepulciano d’Abruzzo is a hugely characterful red wine, filled with layer upon layer of damson and morello cherry flavours. Ideal with a variety of meaty pasta sauces or grilled red meat. Vinification process: The grapes are de-stemmed, then very gently crushed, causing as little damage as possible to the skins. Very frequent remontage takes place before and during fermentation to obtain optimum colour extraction and soft tannins. There is a total of 15 days skin contact before racking. Vine: 100% Montepulciano d’Abruzzo - The grapes are carefully hand-picked in late September and early October. Pickers revisit the vineyards time and time again, only selecting those bunches of grapes at their optimum ripeness.

Winemaker’s notes: Delicate bouquet of peaches, pineapple and passion fruit. Medium-bodied on the palate with the perfect balance of fruit and crisp acidity. Markedly more concentrated than most Frascati Vinification process: The grapes are de-stemmed and soft pressed using a pneumatic press. Selected yeasts are added to the juice, and the juice is separated from the skins immediately. Fermentation takes place at a controlled temperature of 18-20 C in stainless steel for 10–12 days. No malolactic fermentation takes place. Vineyard location: The grapes are selected from gently rolling hillside vineyards in Castelli Romani, north eastern Frascati. Vine: Malvasia di Candia (50%), Malvasia del Lazio (30%), Trebbiano Toscano (20%). Training by the Spalliera system. Harvest: At night (for optimum coolness) in late September/early October. Machine picked, as it is believed that Spalliera trained vines are harvested better by machine, providing whole, untouched bunches.

Winemaker’s notes: This evolution of Casa Girelli’s Merlot is a brand new way of drinking Italian Merlot. The wine has a deep, rich red colour and aromas of ripe red berries surge out of the glass. The palate is packed with rich succulent berry fruit of the Merlot, perfectly complemented by the savoury spicy Nero d’Avola, a grape indigenous to Siciliy. Vinification process: Each grape variety is vinified separately. In both cases grapes are de-stemmed, but not crushed, allowing some to remain intact, and selected yeasts (different yeast strains are used for each grape variety) are added. The must is fermented at 2/30 °C, with remontage occurring at the beginning and “delestage” from 5% alcohol until fermentation is complete. Maceration lasts approximately 10 days for the Nero d’Avola and 18-20 days for the Merlot. Malolactic is carried out on both wines immediately after primary fermentation, after which the wines are blended. Vine: Nero d’Avola and Merlot, the vineyards lie quite close to the sea, which has a great influence on the microclimate of the area. The soil is sandy and arid, but at the same time rich in minerals.

The palate has hints of citrus and tropical fruits, and is mouth‐filling with excellent balancing acidity. Ideally drunk chilled, on its own. Vinification process: After de‐stemming, the grapes are soft pressed in a pneumatic press. Fermentation takes place at a controlled temperature not exceeding 18°C and lasts about 10 days. The first racking takes place after fermentation is complete, the wine is then left on the fine lees for several months to add complexity. The wine is carefully managed in such a way that there is no malolactic fermentation, so no acidity is lost – particularly important in such a hot climate. Vineyard location: The grapes are selected from prime biological vineyard sites in the Marsala and Salemi area. Vines are trained by the traditional spalliera method. Harvest. All grapes are picked by hand in mid September when grapes are perfectly ripe.

Winemaker’s notes: A tremendously characterful fruit-driven red, which is soft, approachable and easy to drink. Packed with red berry fruit flavours –this is the perfect pasta wine or ideal in its own. Vinification process: The grapes are de-stemmed and carefully soft crushed. Selected yeasts are added and fermentation takes place at a controlled temperature not exceeding 26-28°C. Frequent remontage occurs in the early part of the fermentation process and enzymes are added to ensure best extraction of colour and soft tannins. Once fermentation is complete, the wine is racked and then immediately goes through malolactic fermentation in order to obtain the best possible balance by maintaining the perfect level of acidity. Vineyard location: Grapes are grown on hillside slopes in the Marsala and Salemi areas of western Sicily. Vines are trained in the traditional spalliera method. Harvest: The grapes are hand-picked at the beginning of October. A “partial-picking” method is employed where pickers go through the vineyards several times over, only picking grapes which are perfectly ripe.

Winemaker’s notes: A rosé with real southern character, this wine is bursting with ripe fruit. The bouquet is of wild strawberries, and the palate is full of juicy red berry fruit flavours, making this an aperitif, which is hard to beat. Perfectly paired with seafood, salads and white meats. Vinification process: The grapes are de-stemmed and soft-crushed. We use the salasso method of removing the juice from the bottom of the fermenter - this minimises skin content, thereby keeping tannins as low as possible, while giving the wine its lovely pink colour. Selected yeasts initiate the fermentation at about 16-18 C for around 10 days. We do not carry out the malolactic fermentation in order to achieve maximum freshness in the finished wine.

Production area: Veneto (Treviso and Venice area). Harvest: September. Vinification: It is produced under the charmat method: after the still wine is made, another batch of yeast and sugar is added, resulting in a secondary fermentation which occurs in a closed and pressurized tank. This process preserves the fruit personality of the grape. Tasting notes: Brilliant straw yellow colour with delicate perlage. On the palate it delivers ripe assorted apple, pear, some citrus and a dash of nutty almond flavouring. Food pairing: Prosecco works like a charm with antipasti, salumi and prosciutto dishes at the start of a meal: its refreshing flavors working to balance the saltiness of the dishes. It’s also refreshing with cheeses and pairs well with shellfish. While you might think that Prosecco is only for lighter fare, think again. It’s a beautiful match with oven roasted or stewed game, accented with polenta. Native mushrooms such as porcini, and paired with the sweetness of chestnuts brings out the best in flavors of the wine. And with a slow cooked pork belly or roasted chicken is simply delicious. Serve well-chilled.

Winemaker’s notes: This wine is a lovely combination of berry fruits and spice, which bursts out of the glass. The palate is rich and succulent, with an attractive concentration of lush morello cherries, balanced by smooth well-rounded tannins. Vinification process: The grapes from the two different areas were vinified separately. They were de-stemmed, but not crushed. The Avetrana must was fermented with indigenous yeasts, while the Sava must was fermented with selected yeasts, both at 28°C for about 8 days. Frequent closed remontage took place in the first stage of fermentation. After 48 hours 2 delestages a day were carried out, reducing to one a day by the end of fermentation. After primary fermentation each wine was put into American oak barriques (with around 15% Eastern European). Malolactic fermentation took place in barriques. Selected bacteria were added to the wine produced from the Sava grapes, and only indigenous bacteria were used for the wine made from the Avetrana grapes. Vineyard location: Selected vineyards in two top quality winemaking areas of southern Puglia: Avetrana and Sava. The two areas have totally distinct soils and microclimates, producing grapes with very distinct characteristics. (Avetrana: rich dark brown soil with a deep fertile topsoil. Sava: poor dark red soil on a limestone base with a very thin fertile topsoil). The vines have an average age of around 35 years, and are trained on the traditional alberello system with a strictly limited yield of around 50hl/ha.
