Enologist: Carmine Ferrara. Production zone: Hillsides of Ponte, Sannio – Campania with South-west exposure 300 meters above sea level. Soil: Predominantly limestone and clay. Grape yield: 70 quintals per hectare. Vinification: Maceration at a controlled temperature of 18°C. Conservation: Preservation in stainless steel, after the malolactic fermentation in wooden barrels and a short permanence in barrique. Organoleptic characteristic: The name “Anàstasi” means the start of a new path, which this wine fully represents. Anàstasi is made primarily from Aglianico, a grape that was brought to Campania by the Ancient Greeks two millennia ago. Steeped in this rich history, the wine also embraces modernity in the wine making. It is made from top quality clusters from the best Aglianico vineyards and blended with a very small portion of other, carefully selected, indigenous varietals. The wine goes through a long maceration on the skin for thirty days, then a slow two year maturation in stainless steel before bottle-aging. It pairs well with baked or steamed fish and meat dishes.
