Aromas of fresh red fruits. Freshness and subtlety. Creating sparkling wines begins by picking the grapes by hand. The best bunches selected are carefully collected in baskets, to keep them intact. Pressing, to extract the juice from the grapes, is carried out gently to preserve all the aromas of the grapes. After the first fermentation, the wine is bottled. The second fermentation creates the bubbles. The bottles are then stored horizontally in our troglodyte cellars, which provide ideal conditions in terms of temperature and hygrometry. Maturing is carried out on laths to refine the bubbles, provide aromatic complexity and roundness to the wine. Maturing period will be at least 12 months. The top-end wines might mature on laths for up to 24 months. Once the maturation is done, the bottles are placed on slopping racks in an inclined position head down, and are delicately turned several times a day, so that the “depot” can slowly go to the neck in order to be extracted. The last stage consists in adding the liqueur d’expédition. This is based on the secret recipe of each champagne house. It brings an original character to our wines and is the signature of our work.

This white wine, full of character, has intense aromas: flowers, citrus and litchi, pleasantly spicy with mineral notes. A palate combining freshness and softness with crisp, spicy hints. It can be enjoyed as an aperitif or with salads, seafood and white meat. Also known as “Sauvignon rose”, this grape variety was quoted by French Renaissance writer François Rabelais in his works. Although well established in the vineyards of the Loire Valley and Haut Poitou, it became more and more rare at the end of the XIX century after the phylloxera crisis.

Tasting notes: This ruby red coloured wine is bringing out aromas of small red and black fruits. On the palate, the wine is well balanced has a good depth, is well structured with silky tannins. It suits very well to red meat. The lieu-dit of “Les Pouches” can be found in Montreuil-Bellay, a fortified town dominated by a castle, at the gateway to Anjou, Touraine and Poitou. This point of convergence combines tiles and slates, fields of wheat and the vineyards of Saumur. For centuries, the vines provided the local farmers with work and the richer people with a delicious beverage. Terroir: the terroir of “Les Pouches” is characterised by alluvial formations. The alluvial formations are made up of soils with dominant clay-pebbles and sandy-gravelly texture on the surface following the former hydric regime of Le Thouet. The subsoil is much more clayey, giving a standard strength potential and precocity.

Tasting notes: With a lovely golden yellow colour, this wine gives: On the nose, a surprising mixture of mineral notes, aromas of white fruits and spices. On the palate, structure and freshness combined, are providing a briny finish. Suits very well to fishes, seafood, hard cheeses. The lieu-dit of “Les Salettes” is situated on the land of the Château de la Tour in Port-Saint-Père, on the edge of the river Acheneau, which used to be an important local harbour, a “stop-off”, point between Nantes and the Atlantic coast. Terroir: Sandy-silty soil of little depth on a mother rock of “two mica potassic” gneissic granite, giving soils which are naturally rich in potassium. These elements allow for good drainage, and an ideal water reserve and fertility.
