This expressive varietal grows on limestone slopes. Winemaking: The grapes are harvested early in the morning to be as fresh and cool as possible on arrival at the winery. Winemaking is done traditionally in stainless steel vats following low temperature maceration with the skins and pneumatic pressing. Tasting Notes: Pale yellow colour with silver glints. Fruity bouquet with floral notes giving a fresh and mineral wine in the mouth and good length on the palate. Serving temperature: best between 10° and 12°C.

Red wine produced from a blend of Syrah and Carignan. Vines grown on chalky-clay soils. Winemaking: The different grape varieties are vinified separately in order to preserve the unique aromas of each grape variety. The fruit is 100% thermo-vinified in order to transmit a maximum of aroma and concentration to the final blend. Tasting Notes: Deep red colouring with violet glints. The bouquet is distinctive with its aromas of red and black fruit berries (strawberry and blackcurrant) along with a subtle hint of liquorice. Nice balance in the mouth, a well-rounded wine with fruity, supple tannins. Serving temperature: between 15° and 17°C.

White wine produced from a blend of Grenache blanc and Clairette. Vines grown on chalky-clay soils. Winemaking: The different grape varieties are vinified separately before being blended according to the profile required. The grapes are pressed on arrival in the winery then fermented individually in stainless steel vats at low temperature in order to capture the aromas. Tasting Notes: Pale yellow colour with golden glints. Fruity and elegant bouquet with aromas of stone fruits (peach, apricot, nectarine). Good balance in the mouth on a fruit base. The Clairette grapes bring natural sweetness while the Grenache blanc brings liveliness and freshness. Serving temperature: best between 10° and 12°C.

Red wine produced from a blend of Merlot, Syrah and Grenache. Vines grown on limestone terraces. Winemaking: The different grape varieties are vinified separately. Part of the blend is thermo-vinified in order to extract a maximum of colour and flavour. The remaining part is vinified traditionally. Fermentation and pressing precede the final assembly; this is accomplished with the aim of giving the most flattering profile. Tasting Notes: Deep red colouring with violet glints. The bouquet is distinctive with its aromas of red and black fruit berries (strawberry and blackcurrant) along with a subtle hint of liquorice. Nice balance in the mouth thanks to its roundness and fruity, supple tannins. Serving temperature: best between 15° and 17°C.

Complex but delicate bouquet of fruit aromas (white peach, exotic fruit) and meadow flowers. Good balance in the mouth between freshness, liveliness and fullness. The fruit flavours are very noticeable and linger for some time on the palate. Serving temperature: best between 10° and 12°C.

This Block 9 Syrah is exceptional and above all different. It combines a meaty touch, terroir, minerals, spice, fruit and wood maturation at its best. Mineral notes of flint, black currants, black pepper, violets, leather and toast. Matured for 12 months in new French 225 litre casks, we recommend to decant. Full bodied, we kept the Sayang style of elegance and fine tannins allowing the wine to mature for many years. Indulge this wine with game, red meat and stews, or simply with a set of charcoal grilled Premium beef. Serve at 18° C. What you would like to know more: This is a French, Languedoc Roussillon, AOP Minervois La Livinière Syrah dominated wine from a clear and brown schistoux terroir, 100% oaked in new French barriques 225 liter. What people note down during tasting: Very deep garnet-red colour with hints of purple. Very complex and gentle nose with mineral notes of flint, black currants, black pepper, violets, leather, toast and a slight hint of vanilla. Fresh, rich and gentle attack on the palate, full yet elegant bodied, silky tannins. Unctuous, amazingly broad and deep at the same time with a long finish. What winemakers did: Traditional maceration with delestage and a full immersion of the cap before the end of the maceration. Time of maceration: 4 weeks. This Block 88 Cabernet Sauvignon underlines the elegant Sayang style of balanced wood integration. We wanted to enhance finesse, rather than show off with a mere blockbuster. Ripe blackcurrant, blond tobacco, liquorice, black pepper and a hint of vanilla. The stylish fruit and spice characters offer an inviting and full bodied wine with a long finish. We added a touch of Syrah to the blend to complement the rich character of the Cabernet Sauvignon. Discover this wine with hearty flavourful starters, all kinds of meat, stews, matured cheese, game and grilled or refined sauced meat recipes. Serve at 18° C. What you would like to know more: This is a French, Languedoc Roussillon, Pays d'Oc IGP Cabernet Sauvignon wine with a hint of Syrah from a chalk and clay terroir, 70% oaked. Ripe citrus fruit, pineapple, white flower, baked apple & cinnamon, brioche. Rich, creamy yet zesty, this full bodied wine will surprise you on the pallet and reward you with a comforting finish. Discover this wine with flavourful starters, white meats, stir fried noodles, matured cheese, fried and or cream sauced fish recipes. Serve at 9° C. What you would like to know more: This is a French, Languedoc Roussillon, Pays dOc IGP Chardonnay wine from a chalk and clay terroir, 40% oaked in new French barriques 225 liter. What people note down during tasting: A pale yellow colour with hints of green. Complex and intense nose with ripe citrus, chestnuts’ cream, ripe citrus fruit, pineapple, white flower, baked apple & cinnamon, brioche. Generous and straightforward on the palate with a good acidity. Perfect balance with a creamy mouthfeel. Very long finish with a perfect confirmation on the nose. What winemakers did: Skin maceration before pressing. Cold settling and temperature controlled alcoholic fermentation with selected yeast, 60% in tank, 40% in French new barrels. Blend proportions may vary slightly depending on the vintage. Ageing on the lees, with regular stirring at the beginning, for at least 6 to 8 months.
