45% Viognier (limestony clay), 20% Marsanne (limestony sands), 25% Picpoul de Pinet (limestony sands), 10% Clairette (limestone). Fermented in small casks and aged on the lies. This is the third vintage in a row that offers such a great climate conditions for the whites. This is great to be able to take my time during the whites harvest without being under pressure by a ripening rhythm that would be too quick. By the way the CDR 2013 tastes fantastic at the moment. The cool temperatures really allow our whites to be better wines and age well. Almost all the growers in the southern Rhône tend to pick their whites a bit too late. Listen to this « paradox »: the growers from Loire and Burgundy often miss some sun and they still don’t really like it. There is plenty to learn from this attitude isn’t it? The key point is: at the moment you decide when to harvest the whites, don’t follow your instinct. It is a better attitude to remember about the mistakes from the previous vintages than following some instinct! We always want more ripening: this is often a good option for red winemaking and it is often a bad option for white winemaking. Marshmallow, box, liquorish, ripe banana, blackcurrant.

Destemmed harvest. Limestony sands, red clay, rolling stones. Aged in vat. In 2014, the west of the Rhone valley got more rain than the eastern parts. You know that our two sources of Côtes du Rhône are the villafranchiennes terraces from the Gard and the village of Vinsobres on the east side of the Rhône valley. We then got this year two very different situations. The syrah being an early ripening grape in our region, it helped me a lot in such a vintage. My Côtes du Rhône 2014 will contain 75% of grapes fromVinsobres. I never used as much Vinsobres in the CDR. It is simple: to cook the best possible dish, you need the best products; this year the best products were in Vinsobres. I am very lucky to take advantage this year of this fantastic source of syrah. The wine has a lot of personnality. The excellent levels of ripening reached here in 2014 are almost surrealistics given the vintage. A few vats still ferment. There is more power in the 2014 than in the 2013 and the shining fruit of our CDR is there. With a good sensation of relief, the taste of ripening in the mouth is balanced by the freshness and the round texture. As my father would say: « il fait la queue » (« it is long »). Liquorish, gingerbread, redcurrant. Bottled in March 2015.

Fermentation and Aging: Immediate hydraulic pressing. Separation from the must. Alcoholic fermentation in low temperature stainless steel tanks (15°C). Partial malolactic fermentation. Aged “sur lie” (on the yeast lees) until bottling. Tasting: The clear ruby color leads you to the red fruit aromas (strawberries, aspberries, blackberries). The wine is round and appetizing. Winemaking methods: The harvest takes place when the tannins in the grapes reach optimum ripeness. The Syrah is harvested at the same time as the Mourvèdre, which ripens later on. The bunches of grapes are destalked. Both varieties are fermented in a process which lasts about 30 days. The grape skins are crushed in a pneumatic wine press. The press wines are carefully selected and blended according to their quality. Maturing: From 6 to 8 months in 300 litre medium toast casks made from Tronçais oak and oak from the Vosges. Racking.Tasting notes: One look at this wine's intense robe is enough to make you want to find out more! The bouquet is a complex mix of blackberries, liquorice and spice. The palate is dense and juicy, with smooth, well-balanced tannins, a hint of jamminess and liquorice. An elegant wine that may be drunk now but will benefit from several years maturing in a good cellar.

Each grape variety is harvested and vinified separately. The harvest is carried out respecting technical criteria in search of the perfect balance between the P.H.; total acidity and phenolic maturity in the must. The bunches of grapes are destalked. The harvest is cooled before being crushed. The grapes are crushed in a pneumatic wine press at a low pressure. The juices obtained from the first pressing are rigorously selected and the lees are left to settle at a constant low temperature of 15°C. The temperature of the stainless steel vats is controlled during alcoholic fermentation (17°C). The wine is racked after alcoholic fermentation and fined. After having blended the wine from the different vats, a cooling technique is used to prevent any sediment formation later on once the wine has been bottled. The wine is then filtered and bottled mid February.Tasting notes: A vivid salmon-pink hue. An harmonious noise with aromas of fruit stone, melon and white blossom (honeysuckle). On the palate, the floral hint appears again along with strawberry and raspberry. Excellent length. A marvellous wine to be served with food of Mediterranean cuisine. Match with food: Small stuffed vegetables; pan-fried vegetables.
