ale straw color. Fresh, fragrant and mature, brimming with the aroma of Muscat grape, apple, mandarin orange and a pinch of wilted flowers. On the palate it is fruity and dry, with notes of citrus and a gentle finish. The surprising originality of Botani is the fruit from a rigorous process of grape selection and the great care taken in the winemaking process. The grapes used in this wine come from the vines from Almachar that grow on the north-facing mountainous slopes. After manual harvesting, at the end of June or the beginning of August, the grapes are brought to the selection table before pressing. Since they are extremely sensitive to climate changes, we were not able to make this wine in 2005. Botani is our most versatile wine. It pairs perfectly with all kinds of fish, seafood and shellfish, as well as cold soups such as ajoblanco. It is also great with ceviche, sushi, risottos, dishes with black truffle and spicy Thai or Indian food.

PRODUCTION Short maceration of the must with the skins at low temperature for four hours before pressing. For this special wine from the winery that bears its name, only the first portions of the free-run juice from the pneumatic press were used. Fermentation was controlled at very low temperatures. Aging: After the first racking, the wine spent two months in stainless steel tanks on its fine lees before bottling. TASTING NOTES Appearance: The result is this bright straw-yellow wine. Aroma: An excellent combination of citrus, white flowers, and subtle toasty notes. Taste: A broad, enveloping, and creamy palate with fresh acidity and an interesting, evocative finish. Food Pairing: Appetizers, shellfish and white fish, white meats, salads, and seafood stews.

To the eye the wine has a bright appearance, with a light straw yellow color tone. On the nose the aroma is complex and of high intensity where the freshness of the varietal aroma predominates, expressed with notes of citrus and passion fruit. When moving the glass, empyreumatic and mineral notes appear that are supported by a well-balanced toast. On the palate the entry is fresh, with a wide mid-palate.
