Tasting Notes: Castillo San Simón Blanco has a straw yellow color with bright greenish hues. Its aroma is fruity with hints of banana and apple, typical of the varietal. The palate is light, balanced and acidic. Vinification: For this white wine, we obtain the must by straining, without any pressure, and they undergo static racking. Once they are perfectly clean they are fermented at a temperature of 18ºC. Next they are decanted and conditioned to maintain their freshness until proceeding to bottling. .
