Our rosé is elaborated with the desire to offer the consumer a moment of intense pleasure reduced to its purest simplicity. This wine brings rosé back to its primary definition: excacerbated fruit sensation, intense freshness and instant pleasure. Our work is therefore applied to this end, with aromas of strawberries, raspberries and fresh blackberries, and presenting a refreshing acidiy and a weight on the palate bringing roundness and length. Vineyards: Calcareous soils, Clay - « La Contadine », « Bourdichou », « La Prade », « Lamourié » - Density: 6500 vines / Ha. Harvest: Yields: 75 Hl / ha - Sorting - Fully crushed. The idea of vinifying a Syrah as a monovarietal came to us after many years of contemplation. We were aware of the aromatic potential of our Syrah planted in the high slopes, on layers of particularly rocky white limestone. But this was most often fully used in the crafting of our AOC wines. However, its peppery character with a strong concentration of violet, in a very “Northern” style, finally convinced us, even if it means losing the AOC status, to present this wine composed of 100% of this complex variety, which reveals the specificity of our terroir: sunshine, but no heat or jammy fruit on the palate. Just pleasure. Vineyards: Upper parts of « Cantaoussel » and of « la grande Garenne »: Clay-stoney white limestone and calcareous soils - Density: 6500 vines / Ha. Harvest: Yields: 55 Hl / ha - Sorting - Fully crushed. Vinification: 300 Hl stainless steel tanks - Pre-fermentary cold maceration for 5 days at 6°C - Yeast addition - Fermentation at 28°C – Daily pump-overs – Vatting length: 30 days - Malolactic fermentation - Racking – Filtration.

We set out to elaborate a white which breaks away from the Languedoc \\\"standards\\\", by proposing a wine that is focused, bright, fresh and fruity. The use of uncommon grape varieties, their introduction on specially selected parcels, along with our cultivation and vinification techniques have allowed us to achieve these objectives by proposing an explosive wine with strong primary aromas of grapefruit and lemon, presenting itself with a focused structure and balance with a complex finish. Vineyards: « Villeraze »: Clay-limestone « Cantaoussel »: Clay-stony white limestone - Density: 6500 vines / Ha - Pruning method: Guyot single cane, 6 buds. Harvest: Nocturnal harvest - Yields: 75 Hl / ha - Sorting - Dry ice at the parcel. Press: 0,8 bar - Separation of juices. Vinification: Under dry ice - 300 Hl stainless steel tanks - Processing of first juices under inert gas (nitrogen) at 5°C - Cold clarification - Fermentation at 15°C - Racking - Ageing on find lees (2 months) - No malolactic fermentation - Bentonite fining - Tartaric stabilization (0°C) – Filtration.

Origins: La Crau - Valori - Les Grès. Aged for 24 months in 2 to 5 years old barrels. Try to vinify and age a good Chateauneuf is for me a strange exercise. These grapes that I know quite well behave in Chateauneuf in a very different way. It has nothing to do with the knowledge that I got by making Gigondas wines. So, I think I need to forget every year about my Gigondas experiences before beginning the vintage in Chateauneuf. As a grower, trying to transpose a knowledge to another situation is probably a mistake if the final goal is to leave the terroir talk. As an example, it explains why I age Chateauneuf on a different way: 24 months in older barrels. The reds from Chateauneuf need a long ageing. It doesn’t make them more or less age-able on the long term but they do need this long time in barrels to reveal themselves. Chateauneuf took advantage of the freshness of the vintage 2012, just like 2010. The balance is really good and gives to the wine a good identity. For sure it is a less « extravert » Chateauneuf than the 2010, but this is very refined. Trufle, small red berries, gingerbread, smells of garrigue. Bottled without any filtration.

Co-fermentation of 25 different plots from the estate. Aged for 12 months: 15% in new barrels - 85% in 1 to 4 years old barrels. I am not going to explain again how late and strange was 2013. This is an absolutely tiny crop that we had. Such a low percentage of Grenache at Saint Cosme is a rarity. This is not a problem at all but it changes a little the style of the wines. The colour is almost black, the wines have a great concentration and maybe a little less « softness » than usual. A few weeks after the final blend, it revealed itself excellent with a very seducing profile. The ageing, with 15% of new oak, is exactly the same as what I did in 1997. Remember that 70% of the cuvée Valbelle was blended in the Gigondas Classique 2013 in order to get an acceptable percentage of Grenache. With its obvious explosion of fruit, Gigondas 2013 is dense and intense. It has its own identity which doesn’t allow me to compare it to any other vintage. We knew that humans were not as creative as Mother Nature: 2013 vintage reinforces this idea. Strawberry, blackcurrant, liquorish, black pepper. Bottled without any filtration.
