The grapes for this wine picked on 7 september, by hand in cases. The dry and hot summer contributed again to its ripeness perfect antocians and fennoks preservation. The grapes are two times selected - at the wineyard and in the winery, using double storing table. The selection of the whole grape clusters was done on the first table, then the grapes were shelled by machine and the separation of the passed through the seller damaged and unripe grapes was done. The total duration of maceration was 40 days. The wine fermented in stainless steel at temperature 28-32C. It aged in new French oak barrels type "barrique", specially constructed for this wine for 12 months and then 6 months on bottle before launching on the market.

Rubin is a unique Bulgarian grapes variety, created in 1944 through cross-breeding of Nebiolo and Syrah, but its great potential was revealed in the beginning of the 20th century. This high quality regional red dry wine which expresses its own, unigue style was produced from selected and well ripe grapes, picked up by hand in cases and vinified using a technology, specially developed for this grapes variety. It aged 12 months in French oak barrels. The wine has beautiful, dark ruby colour. Its aroma is explosive and attractive, dominated by black berries, dry fig, blue plum, raisins and overripe mulberry, with nuances of chocolate and spices. These aromas dominate in the taste, too. The body of the wine is great, full, mild and velvet and its aftertaste is long, fruity and remembering. It is suitable to be served at temperature 16 - 18C.

The Early Melnik Vine is a unique grapes variety cultivated only in the south-west part of Bulgaria. We took transformed and kept the unique, rich and different aromas and taste and combined them to reach the harmony of the French oak barrels and to produced a wine for connoisseur. The grapes for that red dry wine were picked on 22 September from selected vineyards with controlled cultivating, ripeness and quality of the fruit and the wine was made using the special technology of our winemaker, keeping the potential and the specific characteristics of the grapes.The grapes are two times selected – on the vineyard and in the cellar using double storing table. The selection of the whole grapes clusters was done on the first table, then it was shelled by machine and the separation of the passed through the sheller damaged and unripe grapes was done on the second table. Maceration took place for 18 days and the wine fermented at temperature 28 – 30C. It aged for 8 months in French oak barrels and for 6 months in bottle before launching on the market. The wine has dark ruby red colour with its own brilliance. The feeling of ripe cherries gradates into the aroma of spices, stone and vanilla. It has velvet fruity taste with melted tannins. The pleasant final is enlarged with aftertaste of cherries, nuts and chocolate. It is suitable to be served with red meat dishes, dried and spicy delicacies, game and cheese at temperature 17-18°C.

This is a blend of two of the traditional world grapes varieties, produced from the grapes grown up in selected vineyards. The wines from the distinguished grapes varieties are produced separately from selected, well-ripe, picked by hand and delivered to the winery in crates grapes.The wine aged for 12 months in new French barrels and then it was egalised. The process of aging was controlled, so to keep the fruitfulness of the wines and not to mask the characteristics of the two grapes varieties. After preparing the blend the wine stays for at least a month in order to reveal the full harmony between the participating wines before botling. The wine aged in bottle for 3 months before releasing on the market. The wine has beautiful and dense ruby red colour. Its aroma is intensive, made from the scents of red berries, blueberiies, dried blue plums, having also nuances of chocolate, vanilla and spices. Its taste is rich and fruity, tender with a tone of elegant oak. The body of the wine id full, soft and long with pleasant aftertaste. It is suitable to be served at temperature 17-18°С with game, cheese, red meat and on its own.
