Terroir: Roussillon vineyard area lying between the Pyrenees and the Mediterranean coast. From old vines situated on very fertile red soil, compact limestone and pebbly soil. Vinification – Maturation: Traditional white vinification. Partly matured in concrete vats then in casks and barrels using the solera process. A blend of wines the youngest of which is aged for 10 years. Bottled in December 2012. Appearance: Clear and bright. Amber in colour with copper highlights. Nose: Delicate and powerful blending candied orange, dried fruit and sweet spices. Vanilla and toasted aromas. In the mouth: Fresh and full-bodied, a lovely complexity with flavours of gingerbread, nuts, hints of pale tobacco and delicate woody tastes. Ends on a sweet note. Wine and food: Drink as an apéritif, with foie gras and fig confit, also good with Roquefort, chocolate desserts, praline, caramel. Serve at 15°C. Annual production: 3,300 bottles.
