Terroir: Roussillon vineyard area lying between the Pyrenees and the Mediterranean coast. From old vines situated on very fertile red soil, compact limestone and pebbly soil. Vinification – Maturation: Traditional white vinification. Partly matured in concrete vats then in casks and barrels using the solera process. A blend of wines the youngest of which is aged for 10 years. Bottled in December 2012. Appearance: Clear and bright. Amber in colour with copper highlights. Nose: Delicate and powerful blending candied orange, dried fruit and sweet spices. Vanilla and toasted aromas. In the mouth: Fresh and full-bodied, a lovely complexity with flavours of gingerbread, nuts, hints of pale tobacco and delicate woody tastes. Ends on a sweet note. Wine and food: Drink as an apéritif, with foie gras and fig confit, also good with Roquefort, chocolate desserts, praline, caramel. Serve at 15°C. Annual production: 3,300 bottles.

Terroir: Roussillon vineyard lying between the Pyrenees and the Mediterranean coast. Wines from our best vines on our most suitable terroir. Vinification- Elevage: Traditional vinification at controlled temperature. « Mutage » on must. Matured in vats for 36 months then in barrels for between 24 and 36 months. Tasting: Appearance: Light amber in colour with glints of orange. Nose: Balanced aroma which combines bitter orange, toasted hazelnuts, gingerbread and caramel. In the mouth: Rounded and smooth. Quince jelly and sweet spices flavours ending with lightly toasted and vanilla taste. Wine and Food: Drink as an aperitif or with dessert. Try as an accompaniment to exotic foods and cheeses. Serve at 10°C. Annual production: 9,000 bottles.

Terroir: Roussillon vineyard area lying between the Pyrenees and the Mediterranean coast. Wine from old vines located mainly in the stony less fertile of Salses and Rivesaltes. Grape varieties: 90% Macabeu and 10% Muscat. Vinification – Maturation: Traditional vinification. Fermentation at controlled temperature. Fermentation halted to retain some natural sugar from the grape. Matured in vats over a period of about five years. Tasting: Appearance: Clear amber in colour with orange glints. Nose: Fruit preserves with a strong aroma of orange marmelade and dried apricots. In the mouth: Very sweet with aromas of caramel, fruits and fig preserve. Wine and food: Aperitif. Cheese. Dried fruit tarts. Also a great accompaniment to Asian cuisine. Serve at 12°C. Annual production: 16,000 bottles.

Terroir: Roussillon vineyard area lying between the Pyrenees and the Mediterranean coast. Wine from our premier Black Grenache vines growing on soils that suit this variety best. Vinification: Direct pressing, cold settling and fermentation at controlled temperature. Mutage of the must (grape alcohol added). Held in vats for early bottling. Tasting: Appearance: Tender pink. Nose: Enticingly pungent with lively berry fruit, red currant. Fine touch of strawberry. In the mouth: Smooth finesse, beautifully rounded. Subtle flavours of strawberry, pomegranate and tangerine. Lush yet lively balance. Wine and food: Good as an aperitif or in a cocktail. A good match, too, for lemon tart, tiramisu with red berry fruit. Serve chilled at 8°C. Average return is around 60 hl/hectare. We produce around 17,000 bottles per year. Vinification: Produced in the traditional Burgundy style, with entirely manual grape harvesting and pneumatic pressing techniques. 70% of elevage is done in stainless steel tanks with the remaining 30% in oak. Both are thermo-regulated. Yeasts are naturally occurring to maximise the flavours of the terroir. Tasting: A wine with a golden-green robe, rounded and fruity on the palate. Demonstrates excellent floral notes of acacia, with hints of vegetable, aniseed and liquorice. Enjoyment: An elegant wine, great with fish, game, andouillettes and local goat’s cheese. Type of Soil: Quarternary terrasses and altitude areas of The Petit Causse with chalky soil enjoying a semi-arid Mediterranean climate with wild winters. Winemaking Techniques: Plots of selected Syrah and Grenache. Harvest at optimal maturity. Destemming of all grapes. Short vinemaking (5-6 days). Daily crushing with fermenting temperature controls. After devatting and pneumatic pressing, wines are kept in air-conditioned wineries. Tasting Notes: Nice intense red color with ruby hints. Red berries aromas. Silky and round in mouth with spicy finish. Serving Recommendations: Round and fruity, this fine wine served at room temperature will go perfectly with red meats roasted or in stews. Slightly chilled, it will go with grilled meats, brochettes and roast poultry.
