Production: 2000 bottles. Origin: Kokotos Estate vineyards in Stamata, Attiki at an altitude of 450 metres. Soil: Sand and clay, gently sloping. Microclimate: Sufficient winter rainfall and cool, dry summers. Harvest: Second half of September. Vinification: rapes are handpicked and transported in small crates direct to the crusher de-stemmer. Cold maceration for 15 hours, gentle press in the pneumatic press and static debourbage. Alcoholic fermentation in French oak barrels, for 13 days, at controlled temperatures of 16-18οC. Ageing: 6 months in French oak barrels. Ageing Potential: 3-5 years. Tasting Notes: Appealing light silver-yellow colour, with straw undertones. Fruity aroma, reminiscent of mango, pineapple and peach, with aromatic hints of nuts. Rich flavor with a clear fruity character, ideally expressed in an elegant buttery background with discreet presence of the barrel. Generous and well-balanced in the mouth, with refreshing acidity and fruity aftertaste. Food Pairing: Enjoy with white fish, poultry served with a light sauce and also with exotic salads, vegetable dishes and pâté. Serve at 11-13οC.
