Grapes from our organic vineyards, cultivated at altitudes from 70 up to 330 meters. Vinification: Skin contact for 12 hours, separation must from grapes, clarification and fermentation with indigenous yeasts at 18 °C. Matured for 6 months in stainless steel tanks and then Bottled without filtering. Characteristics: Yellow-golden colour, expressive aromas with fine notes of exotic fruits, citrus and lemon flowers. Lively and balanced on the palate with long aromatic aftertaste and tones of minerality, caramel and butter. Served at 12-14 °C, with seafood, fish, pa.sta with light sauces or salty cheese. Potential aging in the bottle for at least 5 years.

Vinification techniques: Classic white wine vinification from sun dried grapes (10-12 days). Ageing in old oak barrels for a minimum of 24 months. Vinsanto is the most genuine descendant of the “passon oinon”, as the sun dried wines were called in antiquity. During the Middle Ages the ancient volcanic Thira was renamed as Santo Erini – Santorini and thus the wine took the name Vino Santo – Vinsanto, thus declaring its place of origin. Thus, the name is a «historical name of appelation», one of the few still in existence. Organoleptic characteristics: Bright orange-golden color. Rich and complex aroma with dominant scents of dried and sugared fruits. Exquisite structure, acidity and finesse, with a strong aftertaste. Ageing potential: Unlimited. Serving Suggestions: Strong cheese, sweet dried fruit and chocolate. Served at 11° C. Age of vines: Over 50 years.

Production: 1350 bottles. Origin: Kokotos Estate vineyards in Stamata, Attiki at an altitude of 450 metres. Soil: Sand and clay, gently sloping. Microclimate: Sufficient winter rainfall and cool, dry summers. Harvest: Early August for the Merlot and late August for the Cabernet Sauvignon. Vinification: Grapes are handpicked in small crates which are placed in cold storage for 10 hours. The grapes are then de-stemmed and placed in the fermentation tank for pre-fermentation cold maceration. Time of maceration for the Merlot was 11 hours and for the Cabernet Sauvignon 6 hours. Juice was then fermented in stainless steel tanks at a controlled temperature of 12οC, fermentation lasted for approximately 16 days for the Merlot and 20 days for the Cabernet Sauvignon. Ageing Potential: 1-2 years Tasting Notes: Bright pink in colour. Intense aromas with passion fruit and white cherries on the nose. Elegant and refreshing in the mouth, with fruity aromas, good acidity and a long aftertaste. Food Pairing: Serve as an aperitif or makes a perfect match with Greek vegetable dishes, vegetable pies and mushroom risotto. Serve at 8-10οC.

Classic red vinification with fermentation in stainless steel tanks at controlled temperatures of 25-28οC. Maceration for approximately eight days. Cellaring: Two months in French oak barrels. Ageing Potential: 1-2 years. Tasting Notes: Intense deep red colour with purple highlights. Herbal nose with aromas of plum and hints of licorice. A medium weight wine, with good finesse and a bouquet of red fruit with floral notes. Well balanced in the mouth with good structure, supple tannins and good acidity. Harvest: First half of September Vinification: Grapes are handpicked and transported in small crates which are place in cold storage for 24 hours. Grapes are then de-stemmed and gently pressed in a pneumatic press followed by static debourbage. Alcoholic fermentation in stainless steel tanks at controlled temperatures of 12-14οC, lasting approximately 15 days. Ageing Potential: 1-2 years. Tasting Notes: Bright white-yellow colour with grey highlights. A delicate wine with aromas of green fruits with pear, lime and white peaches dominating. Alcoholic fermentation in stainless steel tanks at a controlled temperature of 14οC for approximately 12 days. Ageing Potential: One year. Tasting Notes: A bright white- yellow colour. On the nose aromas of orange zest, grapefruit and citrus dominate. A well balanced wine with a refreshing acidity. Production: 7000 bottles. Vineyards: Kokotos Estate vineyards in Stamata, Attiki at an altitude of 450 metres. Soil: Sand and clay, gently sloping. Microclimate: Sufficient winter rainfall and cool, dry summers. Harvest: First 15 days of September. Vinification: Grapes are handpicked and transported in small crates which are placed in cold storage for 20 hours. Grapes are then de-stemmed, a percentage are crushed and the pulp is transferred to a stainless steel fermentor. Cold maceration for two days, alcoholic fermentation at controlled temperatures 25-28°C, temperature being allowed to rise gradually as the fermentation proceeds. After a maceration period of approximately 12 days and following the completion of the alcoholic fermentation the wine is transferred to French oak barrels. Ageing: 23 months in French oak barrels. The wine is then bottled without any further treatment and is further aged in bottle for at least 6 months. Ageing Potential: 10-15 years. Tasting Notes: Intense deep red colour with ruby highlights. Dense, complex bouquet with aromas of red fruits, prunes, tobacco, spices, cedar, green peppers and dark chocolate. Generous and robust mouth with well structured tannins, excellent balance and a fruity aftertaste. Food Pairing: Accompanies rich meat dishes, game and ripe cheeses. Serve at 18-20°C.
